
This is the perfect weeknight dinner that takes under an hour with little mess!
What’s a sheet pan meal?
A sheet pan meal is a recipe where everything is cooked at the same time on one sheet pan in the oven. Dump everything on your sheet pan. Season. Drizzle some olive oil. Pop in the oven and DONE!
I love sheet pan meals because I can tackle other tasks while dinner is cooking in the oven.
PRO TIP: Line your sheet pan with aluminum foil for quick and easy clean up! All of the residue will fall on the foil that you can easily discard. It’s a lot easier than scrubbing a sheet pan.




Sheet Pan Pesto Chicken with Roasted Summer Vegetable
3-4 servings
Ingreidents
For the chicken:
- 2 lbs skinless boneless chicken breast
- 2 heaping TBS of sun-dried tomato pesto, or basil pesto if preferred
- 2 TBS minced garlic
- 4 TBS of dried basil
- 4 TBS of dried rosemary
- Kosher salt and black pepper to taste
- 2 TBS of olive oil
For the summer vegetables:
- 2 medium zucchinis, sliced
- 1 large red onion quartered or cut into wedges, root intact
- 2 TBS minced garlic
- 2 TBS of olive oil
- Kosher salt and pepper to taste
Procedure:
- Preheat oven to 450 degrees Fahrenheit
- Place chicken breasts in the center of the sheet pan lined with aluminum foil
- Season both sides of chicken breasts with salt, pepper, dried basil and dried rosemary
- Spread pesto on the top of each chicken breast
- Spread minced garlic on top of each chicken breast
- Drizzle with olive oil
- Gently scatter zucchini and red onion around chicken breasts
- Sprinkle salt and pepper on zucchini and red onion
- Sprinkle garlic on zucchini and red onion
- Drizzle zucchini and red onion with olive oil
- Rub oil and garlic into zucchini and red onion so it is evenly distributed
- Place in oven and cook for 25-30 mins or until chicken is fully cooked.
