Cardamom Rose Flan for Two

Here is a simple rich and creamy custard covered in rose-infused dulce de leche sauce. Perfect for date night!

What is flan?

Flan is a rich and creamy custard covered in sweet caramel. It is a Latin American dessert often made with condensed milk and eggs. My version only uses half and half (single cream) and store-bought dulce de leche instead of caramel.

What is dulce de leche?

Dulce de leche is sweetened condensed milk that is cooked down until it reaches a caramel color. It is thick, rich. and sweet. Some people make homemade dulce de leche, but this recipe uses store-bought. It’s faster and easier.

Cardamom Rose Flan for Two

Equipment Needed

  • One 10 inch ramekin or two 5 inch ramekins
  • Baking dish big enough to fit ramekin(s)
  • Tea kettle or pot to boil water

Ingredients

For the flan:

  • 1 cup half and half
  • 2 egg yolks
  • 1 TBS white sugar
  • 1/4 tsp of ground cardamom
  • 1 tsp vanilla extract

For the dulce de leche:

  • 3 TBS dulce de leche
  • 1 TBS rose water (Note: be sure to get rose water for cooking and baking, not the kind with added chemicals for skin care)

Procedure:

  1. Preheat the oven to 350 F
  2. Put a full tea kettle (or medium sized pot) of water to boil
  3. Whisk all of the flan ingredients together in a bowl or large mixing cup. Set aside.
  4. Add dulce de leche to a small pot and gently heat on low to medium heat for 1-2 min. Stir in rose water. It should be a runny consistency.
  5. Add rose dulce de leche to ramekin(s). Swirl it around to coat the walls of the ramekin(s).
  6. Whisk flan mixture gently and add to coated remikin(s)
  7. Carefully place baking dish on oven rack. Then add ramekin(s). Carefully add inch of boiling water to baking dish.
  8. Bake for 30 mins or until flan wobbles/jiggles when you gently shake it.
