Coconut Cardamom Oatmeal Muffins

Vegan & Flour-free

Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 TBs baking soda
  • 2 over ripe bananas, mashed into smooth paste
  • 3/4 cup unsweetened almond milk
  • 2 TBS almond butter
  • 1 TBS ground flax seed
  • 2 TBS ground cinnamon
  • 2 tsp ground cardamon
  • 2 TBS sliced almonds
  • 1 tsp vanilla extract
  • Unsweetened coconut flakes for topping/garnish

Equipment

  • Muffin tin
  • Muffin/cupcake liners
  • 2 mixing bowls

Procedure

  1. Preheat oven to 350 F
  2. Mix rolled oats, baking soda, cinnamon, and cardamon in a large mixing bowl. Set aside
  3. Mix almond milk and flax seed in a separate bowl. Let sit for 5 minutes.
  4. After 5 minutes, stir in mashed bananas, vanilla extract, and almond butter into almond milk flax mixture.
  5. Combine wet and dry mixture until well combined
  6. Stir in sliced almonds
  7. Spoon in mixture into lined muffin tin
  8. Top each muffin with a generous amount of grated coconut
  9. Bake for 30 mins
  10. Leave muffins in tin for 1-2 mins
  11. Remove muffins from tin to cool completely
