Apple Masala Pancakes

A perfect start to a crisp autumn morning. Apple pancakes made with warm spices. Perfect for leftover mealy apples.

Yields about 3 pancakes. Can serve 1-2 people

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 medium sized apples – peeled, cored and roughly chopped
  • 2 TBS salted butter, melted
  • 3/4 cup milk of choice (I used oat milk)
  • 1 egg, lightly beaten
  • 1 TBS light brown sugar (you can add more to taste)
  • 1 TBS ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp black pepper
  • 1/2 tsp ground cardamom

Procedure:

  1. Whisk together dry ingredients (except chopped apples) in a mixing bowl
  2. In a separate bowl, mix wet ingredients
  3. Whisk in wet ingredients into dry mixture
  4. Mix in half of the chopped apples
  5. Pour some of the batter into a non-stick pan
  6. Use the remaining chopped apples to sprinkle on top of each pancake, while cooking
  7. Cook a few minutes on each side until golden brown
  8. Serve with butter and maple syrup
