
A perfect start to a crisp autumn morning. Apple pancakes made with warm spices. Perfect for leftover mealy apples.
Yields about 3 pancakes. Can serve 1-2 people
Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- 2 medium sized apples – peeled, cored and roughly chopped
- 2 TBS salted butter, melted
- 3/4 cup milk of choice (I used oat milk)
- 1 egg, lightly beaten
- 1 TBS light brown sugar (you can add more to taste)
- 1 TBS ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp black pepper
- 1/2 tsp ground cardamom
Procedure:
- Whisk together dry ingredients (except chopped apples) in a mixing bowl
- In a separate bowl, mix wet ingredients
- Whisk in wet ingredients into dry mixture
- Mix in half of the chopped apples
- Pour some of the batter into a non-stick pan
- Use the remaining chopped apples to sprinkle on top of each pancake, while cooking
- Cook a few minutes on each side until golden brown
- Serve with butter and maple syrup
